Crudo

I listen to podcasts, usually when I’m driving around town and always when I take my walks in the morning. One of the programs I collect to listen to is the “NPR Story of the Day,” which is - just what the title says - collected from “All Things Considered,” “Morning Edition,” “Talk of the Nation,” and other NPR programming.

Anyway, yesterday’s “Story of the day” was a follow-up from an article I read in The New Yorker a few months back about Esca, a pretty special restaurant in New York. David Pasternack, the chef and owner, is interviewed, talks about his “crudo,” and, man, you just gotta listen.

Here’s the link to the NPR piece. Be careful you’re not too hungry as Pasternack describes his flounder.
